Sandwich #168–“Fuel for the Day” Egg and Avocado Toast

eggavocDay two of Fashion Week, and I’m already on fumes. So is E.

Every meal I’ve eaten was in bar form until last night. Kind Bars, Nutri-Grain Bars, Go Lean bars. All preservatives, all the time. Last night, I took E out to some Fashion Week events, and after a few stops and a few glasses of Champagne, we went for some late night pizza. It was my first meal not wrapped in plastic in two days, and gave us enough fuel to hit up another party and dance and until 2 am.

This morning, we needed some real food. I made a quick brekkie for E and I of eggs and avocado toast. Mashed avocados are acceptable for E (sliced avocados–straight to the trash!) I kept the sandwich open faced since, well, it was Fashion Week and we both need to watching the carbs. Protein and toast would keep us both going until tonight’s round of events.

“FUEL FOR THE DAY” EGG AND AVOCADO TOAST
2 pieces toast
4 eggs
3 avocados
1 tablespoon olive oil
black pepper
sea salt

Boil eggs for about 10 minutes. Mash avocado with a bit of olive oil, sea salt and pepper. Toast bread. Spread avocado mash on toast. Slice eggs, then layer on top of avocado. Sprinkle with more black pepper and sea salt, and serve. Makes two open faced sandwiches.
