Sandwich #148–“Recess Friday” Bagel with Ricotta, Banana and Apple Butter

DSC_0827 Fridays are a day of recess. They’re for planning the weekend, lingering over breakfast and arriving at work with a smile knowing you don’t have to come back the next day.

Since I’d worked hard all week, making sandwiches and working and working out (I’m still working on the “Sexy Project,” so I’m still pole dancing!) I deserved to take an easy day.

I made coffee this morning while E was still in bed, and looked around for breakfast ideas. I didn’t want to do anything healthy or carb free or low sugar. On Fridays, we take a recess from being healthy.

I spotted frozen mini bagels in the freezer. Ricotta in the fridge. Apple butter we still had from Vermont. Bananas in the fruit basket. Dunzo!

E strode into the kitchen–without his white robe, since it was too hot for terrycloth—just as the toaster popped. We sat on the couch in the air conditioned living room and ate, enjoying breakfast well past when both of us needed to be in the shower.

Ah Fridays.

After breakfast, I got ready for work. E popped out of the bathroom, a grey towel draped around his waist. “If that is my towel, I’m going to scream,” I glared.

He looked up at the hooks. “Um…..” The Towel Bandit had struck again.

That’s it. We’re using separate bathrooms from now own.

2 mini bagels
2 tablespoons ricotta cheese
2 tablespoons apple butter
1 banana, sliced
2 pats butter

Toast bagel. Smear one side of bagel with pat of butter, then ricotta, then apple butter, and layer on slices of banana. Sprinkle with cinnamon if desired. Top with top of bagel and serve. Makes 2 sandwiches.
