By 300 Sandwiches

The only thing getting me through this week is avocado toast.
I am finishing up edits on my book, which is now available for pre-sale on a few retailers (go get it today), and I. am. almost. done.
I have done nothing but eat and sleep and edit and breath for the last two weeks. You may have noticed I haven’t been posting as much lately… but I’m almost there.
E, aka the Internet’s Worst Boyfriend, has been cooking, pouring wine, taking out the trash, massaging my shoulders and reading chapter after chapter while I’ve been parked in front of the computer. How despicable of him. After Friday, I’ll owe him more than a sandwich.
Editing has left me no time to cook. Thank god for avocado toast. It’s the perfect breakfast, particularly when every minute of your morning is spent in front of a computer. Healthy fats, combined with 7 grain bread, plus sea salt and a bit of olive oil, in a meal that takes 3.5 minutes to make. Keep it simple, keep it pure, and savor it with a cup of coffee or juice for breakfast. Feel good that you’ve fed your body something good. And then, take on whatever challenges or deadlines you’re facing. You’ve got this.
1 avocado
2 pieces whole wheat bread
2 pinches sea salt
2 pinches of pepper
drizzle of olive oil
red pepper flakes (optional)
Toast bread. Scoop out avocado and smear on both pieces of toast. Sprinkle on salt, pepper and red pepper flakes (if you like it spicy). Drizzle on olive oil. Cut slices of toast in half and serve.
