I realized that I have not yet cooked ANYTHING involving pumpkin in all of October. Now’s a good a time as any.
My mom arrived last night and is staying with us for a week. In that time I hope to finalize some of our wedding plans, including finding a beautiful white dress I like. Meanwhile, we gals gotta eat.
I’m think some nice pumpkin bread with pumpkin seeds would be a nice weekend breakfast treat, and can make for yummy bread for a sweet breakfast sandwich. Or, I could do pumpkin French toast! Stuffed with marscapone! Yum!
Or, I could do some pumpkin cheesecake sandwich bars, with a sprinkle of cinnamon on top, for a fall night’s treat.
When mom’s in town, all diets shall cease!
