Sandwich #285–“Before The Fight” Chicken Waldorf Salad Sandwich

285chixwaldorfLO2E and I were lucky enough to go to the Wladimir Klitschko/ Bryant Jennings fight on Saturday night at MSG. But before the fight, we had snacks.

Chicken waldorf salad scooped onto a crusty bun or toasted wrap is a nice spring sandwich and easy low cook snack. I made mine with chicken, grapes, apples, celery, onions and walnuts, and added a dash of sesame seeds and black pepper. I served it up to E a few hours before we left for the match.

This was E’s first time at a live fight. I interviewed Klitschko for my day job a few months ago, and I’m a fan of his. We had amazing seats and got to meet a few VIPs and the card girls who carry the round cards during the match. I’d been to one other fight at MSG before, and coincidentally it was for Klitschko’s last fight at the Garden eight years ago. I taught E a few things about boxing, like how if you’re a VIP sitting in the first few rows you don’t want to wear white in case blood splatter comes flying your way.

We wore dark colors and sat more than 10 rows back. But we were still close enough for E to snap photos of a few of the card girls in action.

“BEFORE THE FIGHT” CHICKEN WALDORF SALAD SANDWICH>
2 boneless skinless chicken breasts, cooked and cubed
1 small red onion, chopped
1/4 cup diced celery
1/3 cup chopped walnuts
1/2 small green apple, chopped
3/4 cup chopped seedless grapes
1/4 cup mayonnaise
1/3 cup plain Greek yogurt
1 tablespoon tarragon vinegar
black pepper

Combine all into bowl and mix well. Toast buns. Layer on lettuce and scoop out chicken salad onto buns and serve. Makes enough for four to six sandwiches.
