Sandwiches #144 and #145–“Clink and Clunk” Shrimp and Steak Lettuce Wraps

DSC_0827 Here’s another sign that I’m turning into my mother.

I love her dearly, and she loves my father and I more than anything. But my mother is sort of a control freak, and has to be all knowing about everything happening in her house at all times. “Did you lock the back door? Is the garage door open?” Did you clean the bathroom?” “How much did you spend on groceries?” “Didyoudidyoudidyoudidyou?”

My father affectionately calls her Colonel Clink for her drill sergeant line of questioning around household chores. Whenever Mom gets naggy about mundane things like crumbs on the countertop, he’ll yell, “clink clink!” It diffuses the annoyance of the nagging, and makes us all–even mom herself–laugh at her controlling ways.

Like my mother, I take pride in my home. But I often assume E doesn’t share the same desire to keep our place pristine as I do. So I remind of how things should be done. For example, on Saturday, E and I did a thorough clean of the house. “I’ll do the floors,” he volunteered, grabbing the mop.

“Did you sweep first? Are you going to sweep first? You know you need to sweep first, right? And don’t forget to water the plants first. And maybe throw the dishes in the sink first so you don’t have to walk on the wet kitchen floor. And did you rinse the dishes before putting them in the dishwasher?”

Thus, E has nicknamed me Colonel Clunk for my overbearing inquiries. “Yes, Clunk, I will sweep first!” he yelled back. Then he pretended to swing a pair of keys on an oversized key ring, like a prison warden.

After cleaning, we wanted something light—like lettuce wraps—to munch on. It was too darn hot to have an oven on and dishes to do afterwards. I made shrimp wraps in the afternoon, then made steak wraps for E and a dinner guest for dinner. Both were delicious, easy meals. But I didn’t make the cooking process that easy.

When E volunteered to make the steak, I fell back to my Clunk-esque ways. “Did you put it on the stove yet? Our company is coming shortly! When are you going to cook it? Are you going to slice it into strips?”

“Clunk, I GOT it!” E yelled.

Mom, it’s like looking in a mirror some days.

“CLINK AND CLUNK” SHRIMP LETTUCE WRAPS
1/2 pound shrimp, cooked
1 head Boston Bibb lettuce
1/2 cup scallion, chopped
1/2 mango, sliced
1/2 cup Vietnamese mint, chopped
1/2 cup cilantro, chopped
1/2 cup peanuts, chopped
1/2 cup carrots, julienned
juice from squeeze of lime wedge
juice from squeeze of lemon
salt and pepper, to taste

For the shrimp rub: 1 teaspoon each of black pepper, cumin, cayenne pepper, chili powder,
sugar and garlic power

First, mix all ingredients of rub into small bowl. Peel and devain shrimp. Then coat the shrimp in the blackening seasoning. Cook shrimp on medium heat for about 2 minutes each side, or until shrimp are no longer translucent. Remove from heat and squeeze on lemon juice for added flavor. let cool on plate. Slice into small pieces and scoop into small bowl.

Place all of your chopped veggies, fruit and nuts into small individual bowls or on a plate for serving. Rip leaves off of bib lettuce head and place in another bowl for serving.

To assemble lettuce wraps: place lettuce leaf in hand. Scoop on two tablespoons or so of shrimp, then sprinkle on mango, mint, cilantro, peanuts, carrots, and lime juice. Wrap one side over another and dig in. Makes 8-10 wraps.

“KEEP IT LIGHT” STEAK LETTUCE WRAPS
1 pound flank steak
1 head Boston Bibb lettuce
2 tablespoons brown sugar
1/2 fish sauce
1 tablespoons lime zest
1/3 cup lime juice
2 garlic cloves, minced
1 jalapeno, sliced
1/2 cup cilantro, chopped
1/2 cup scallion, chopped
1/2 mango, chopped
1/2 cup Vietnamese mint
1/2 cup peanuts, crushed
squeeze of lime

Marinate the steak in fish sauce marinate for at least 30 minutes (you can do this overnight, too). Cook steak on medium heat for about 5-7 minutes each side or until desired temperature. Remove, and slice into strips.

Place all of your chopped veggies, fruit and nuts into small individual bowls or on a plate for serving. Rip leaves off of bib lettuce head and place in another bowl for serving.

To assemble lettuce wraps: place lettuce leaf in hand. Scoop on a few strips of steak, then sprinkle on mango, mint, cilantro, peanuts, carrots, and lime juice. Wrap one side over another and dig in. Makes 8-10 wraps.
