Friends of 300: The Kitchy Kitchen’s “S’meaches”

I met a wonderful new friend the other day: Claire Thomas, the author of the food blog The Kitchy Kitchen. We were introduced by mutual friends, and met over coffee yesterday morning near my office. In two hours of coffee talk, I found out she’s a super talented commercial director and photographer born and raised in Los Angeles, and an amazing cook. And, get this—she got engaged to her wonderful boyfriend Craig last weekend! How funny that we both got engaged within days of each other!

In addition to her spunky personality and crafty sense of humor, Claire is super thoughtful. She brought me a gift box of her “s’meaches,” s’mores made with peaches, homemade lavender and rose water marshmallows and graham crackers. I was so touched by the sweet treats, and couldn’t wait to make a batch for E.

I took the marshmallows, graham crackers and the peach out of the gift box and made the s’meaches early this morning for breakfast—it’s Friday, so dessert for breakfast is okay, right? Gooey, homemade marshmallows with spicy brown sugared peaches tasted, as E said, “like I was back in Portland.” We scarfed down two of them before work. E gave it a three word rave review. “That is insane!”

S’meaches will also make a great late night snack, washed down with Champagne, in bed with my fiance (still getting used to that word!).

Claire, thanks so much for the treats, and congratulations to you on your engagement. Looking forward to hanging out in L.A. soon!

THE KITCHY KITCHEN’S “S’MEACHES”
1/4 teaspoon cayenne pepper
1/2 cup light brown sugar
1 peach, cut into 8 slices and halved horizontaly
8 marshmallows
8 double graham crackers

Combine the cayenne and sugar, and toss in the peaches in mixture. Put 1 peach slice and 1 marshmallow on each of 8 skewers. Use metal skewer or soak wooden skewers in water 30 minutes before using.

Toast over a medium-low flame until caramelized and browned.

Lay a peach marshmallow skewer on a graham cracker half. Pull out skewer. Sandwich with another graham cracker. Enjoy immediately! Makes 8 s’meaches.
