300turkLO Made it.

Almost three years, umpteen pieces of bread, dozens of jars of mustard and mayonnaise and soy sauce and who knows how much money spent on groceries. Three hundred sandwiches. Worth every penny.

Worth every moment of frustration in the kitchen. Every late night and early morning to make meals. Every sandwich with my soon to be husband. Every smile, Every bite.

I’d do it all again, for sure.

Would you?

Ask yourself—is your special someone, your husband, your wife, your dog walker, your mom, worth one sandwich? Are you worth one sandwich?

If not, then perhaps you should rethink who you’re with. Do you really want to spend your life with someone you wouldn’t make a sandwich for? Would you spend your time with someone not worth the five minutes it takes to make a BLT? Certainly that kind of person wouldn’t be worth your energy to start a family with. Or share a mortgage with.

And then ask yourself—are you the kind of person someone would make a sandwich for? If not, what would it take for you to be that someone? Compassion? Generosity? Work on that. Sandwiches taste better when someone makes them for you.

This isn’t the end of the sandwiches. I’ll always make sandwiches for the one I love, so long as he likes to eat sandwiches.

But for the next few weeks, I’m concentrating on our wedding. Just over two short weeks until I’m Mrs. 300 Sandwiches.

“THE MRS. E” TURKEY AND SWISS
2 slices nutty wheat bread
1 1/2 tablespoons whole grain dijon mustard
4 leaves romaine lettuce
6 slices smoked turkey
4 slices gruyere cheese
black pepper

Toast bread until crunch. Spread Dijon mustard on both slices of bread. Blot dry the lettuce, trim the leaves to fit, and place on both slices. Fold the turkey slices on top of the lettuce. Add the cheese slices. Sprinkle with black pepper. Put the two sides of sandwich together and smush down gently. Cut on the diagonal and serve with dill pickles. Makes 1 sandwich.
