Sandwich #85–“Guy Night Out” Turkey Lettuce Wraps

DSC_0324 E deserved a break from taking care of me all week. Poor thing hadn’t seen his friends, hadn’t gone out to dinner or drinks since I came down with the flu. Since I was back to work, E wanted to reclaim his social life. “I’m having Scotch tonight!” he declared.

“With who?” I asked.
“By myself!” he said. “I need to get out of this house!”
He earned a night out. I agreed to make dinner.

I was still on the mend so I wanted to incorporate healthy, germ fighting ingredients like ginger into the meal. I thought turkey lettuce wraps would be a good, easy fix. But as soon I chopped all the veggies, I got a text from E right when we were supposed to eat. “Oof another half hour, ran into a friend.” One more round of Scotch. I wondered if he’d be able to taste the food when he walked in.

Mr. Johnny Walker Black walked in a half hour later as promised. “Arrrrgh!” he said, channelling Johnny Depp from Pirates of the Carribbean. “What be for dinner?”

“Turkey lettuce wraps. That cool with you?”

He wolfed down four (!) wraps before coming up for air. There were no leftovers.

Rating:
Fish sauce. Vietnamese fish sauce. With a little bit of garlic, chili, lime and sugar It’s like mana from southeast asian heaven. Make sure you get one that’s really light/pale in colour. It’s kinda like rosé in that aspect: the paler the better (usually, and IMO of course).
“GUY NIGHT OUT” TURKEY LETTUCE WRAPS
1 pound ground turkey
1/4 cup soy sauce
4 tablespoons fish sauce
4 teaspoons sugar
1 shallot, chopped
2 cloves garlic
4 green onions, chopped
1/2 cup cashews, chopped
3 carrots, shredded
1 tablespoon vegetable oil
2 tablespoons shredded fresh ginger
1 teaspoon cayenne pepper
1 head romaine lettuce (we used about 6-7 romaine hearts)

Combine soy sauce, fish sauce, and sugar in small bowl until sugar melts and set aside. In a skillet, with the oil, brown the shallots, ginger, garlic and cayenne pepper in the pan for about a minute, just to release the flavor. Then mix in turkey meat, and cook until brown. When almost done, around 5 minutes, add half of the fish/soy sauce, saving the other half. Cook for another 2 minutes, then set aside. Have your chopped carrots, onions and cashews ready in small bowls or on a plate.

Take a romaine heart in your palm, and pile on spoonfuls of the turkey mixture, green onions, carrots and cashews. Wrap the sides over on each other, and enjoy. Makes 6-8 wraps.
