Sandwich #215–“Polar Vortex, Inside and Out” Apple Butter, Brie and Walnut Grilled Cheese

215applebrieLOIt’s cold. Everywhere. Particularly INSIDE OUR APARTMENT.

It’s so cold, I got frostbite when I brushed my teeth (okay not quite, but it was 55 degrees in our living room because the heater went out. Again).

coldLOIt’s so cold, I slept in my ‘300 Sandwiches’ fleece jacket and heavy sweatpants last night (see me, pictured right, still cold). The heater in our bedroom is inconsistent, too. It decides to cut off in the middle of the night, so when we crawl from under the covers in the morning we get hit with a blast of arctic air. I know that head to toe fleece getup is not exactly Victoria’s Secret, and hardly proper nighttime attire to seduce my man. But it’s too damn cold in our apartment to seduce anyone.

It’s also so cold, that breakfast this morning had to be something warm. And since we’ve got a month’s supply of homemade apple cognac butter, I wanted grilled cheese with that spreadable sweet gold. Brie, walnut and apple butter paninis were what I had waiting for E when he returned from CrossFit. Was it six pack friendly? No. Was it an excuse to stand in front of the hot panini press for heat while the cheese melted and the bread toasted? Yes.

Was it good? You bet—warm, sweet and crunchy. Plus, we’ll burn off all of the extra calories from the decadent sammie just trying to regulate our body temperature in this Polar Vortex cold.

Now, excuse me while we notify our superintendent about this heating issue.

“POLAR VORTEX, INSIDE AND OUT” APPLE BUTTER, BRIE AND WALNUT GRILLED CHEESE
2 slices bread
1/3 cup brie, thickly sliced
2 teaspoons apple butter
2 teaspoons chopped walnuts
sprinkle of cinnamon
few pats of butter

Butter bread. Flip over and slather on apple butter. Spread on brie, sprinkle on chopped walnuts and cinnamon. Warm in panini press or in skillet until bread browns and cheese melts. Slice in half and serve.
