Sandwich #208–“From Hot to Cold” Blackberry Grilled Cheese

208bluecreamLOWe’re back from sunny Florida—or as E says in his nasally grandma accent, “FLA–ri–DAH!”

This weekend E and I saw two of our dear friends get married in a festive ceremony with loving family and friends. We danced until our legs cramped and ate so much food that I had to go for long runs on the beach just to make sure my stomach didn’t burst from the excess calories.

We returned last night to chilly New York after basking in the sun on the beach for three days. But as you can see from the photo, I’m still hanging on to that warm vacation sensation as long as I can (see, if I throw out the boarding passes, it will mean vacation is really over).

But alas, we have to go back to reality eventually.

E and I assessed our week (and our medium term goal of moving somewhere warmer). Only 9 more shopping days until Christmas. Only 5 more days until I fly home to see my parents. Only 2 free nights this week to make Christmas cookies! And this morning, I only had about 20 minutes to make breakfast.

I wanted to do something healthy, but then I thought back to the breakfast buffet and the plethora of fresh fruits and sweet desserts available at each meal at our resort this weekend, and wanted to create that same indulgent feeling as we got ready for work. Blackberry grilled cheese sammies, with cream cheese, were super easy, filling and warm. Perfect for December mornings, particularly Mondays, when you need a sweet treat to get you motivated to go back to work.

“FROM HOT TO COLD” BLACKBERRY GRILLED CHEESE
2 pieces bread
ten blackberries, sliced in half
2 tablespoons cream cheese
sprinkle of cinnamon
pat of butter

Melt butter in non-stick pan over low heat. Slater on cream cheese on two pieces of bread. On bottom slice, layer on blackberries, then sprinkle on cinnamon. Layer top slice of bread on top of blackberry-lined slice. Place sandwich in warm skillet, and toast until brown, flipping once. Remove from heat, slice in half and serve.
