I think I found out how to make peach cobbler in sandwich form.
For a fast mid-afternoon snack, I wanted something I could make into small bites in under 10 minutes before I rushed out to Fashion Week events. I found a few peaches in the refrigerator I forgot I bought earlier this week. Peaches and cream cheese, sprinkled with a little bit of cinnamon and nutmeg, and a drizzle of honey, could work well, particularly when warmed up on a skillet.
I assembled it and presented it to E, he thought it was better than great. “This tastes like that peach cobbler you made in Portland when we were on vacation,” he said.
Indeed it did. The warm, buttery bread with the sweet creamy middle did taste like cobbler. But with half of the calories. How apropos for Fashion Week.
2 piece bread
2 tablespoons butter
1 peach, sliced
2 tablespoons cream cheese
1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon honey
On fresh wheat bread (I like Arnold’s Seven Grain), spread cream cheese. Layer on peach slices. Sprinkle cinnamon and nutmeg on top. Drizzle honey. Top with another slice of bread. Add butter to skillet and warm on medium heat. When butter melts, add sandwich. Press down and warm on each side until bread is toasted. Cut in half or quarters and serve.
