Sandwich #166–“Lazy Morning” Banana Bread Sandwich

banabread I will be fasting for the next three days. Between the fried chicken, a few glasses of wine last night and today’s banana bread sandwiches, My thighs are crying. E’s might be, too.

But for one last indulgent lazy summer breakfast, what better meal than banana bread? I’ve gotten my banana bread recipe down cold from practice (walnuts are a must), so I made up a batch before I went to sleep. “Babes, the house smells good!” E said as we tucked into bed, snuggling tight against me and nuzzling against my ear, a big ol’ smile on his face. “Mmm, I love you,” he cooed. Ladies, take note— that’s what fresh baking banana bread will do to a man.

The next morning, I sliced up banana and smoothed on the slightest bit of Nutella just so the banana slices didn’t slide off. E slinked into the living room in that white terrycloth robe of his and took to the couch, turning on “Pirates of the Carribbean” in Spanish because he was too lazy to change the channel. He was also too lazy to use his hands, so I fed a bite sized sandwich into his mouth like a momma birds does with worms in baby bird’s mouths.

“Mmophohaym, thith isth scho good,” he mumbled.

“LAZY MORNING” BANANA BREAD SANDWICHES
4 medium sized ripe bananas
1/3 cup melted butter
3/4 cup sugar
1 egg
1 tablespoon vanilla extract
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 pinch salt
1 1/2 cups whole wheat flour
1/4 cup chopped walnuts
1 tablespoon Nutella
1 banana, sliced

Preheat oven to 350 degrees. Grease a 4×8 inch loaf pan with butter or cooking spray. Combine bananas, sugar, and butter in a bowl. Add beaten egg, then vanilla extract, then baking soda, and combine well. Add cinnamon, nutmeg and salt, mix well. Add flour and mix, then fold in walnuts until just combined. Pour mix into loaf pan, spreading evenly, and pop in the oven. Bake for an hour, until a toothpick pierces the loaf and comes out clean. Let cool.

Next, slice bread into slices. Take one slice, smooth on just enough Nutella so the bananas stick to the bread. Add layer of banana slices on top. Top with another slice of bread. Cut into halves (or quarters, it IS a lot bread), and serve.
