This sandwich was so frustrating to make. Not because of its ingredients, but because E micro managed the entire process. I came up with the idea to have salmon cake sandwiches, but Mr. Wannabe Eric Freaking Ripert decides that salmon sandwiches wouldn’t be enough. We had to have swordfish.

E is not partial towards green vegetables. He loathes broccoli. “The devil’s vegetable,” he told me, adding if I ever dared cook it for him he would throw it at me. He also hates spinach–him and Popeye don’t share the same culinary preferences.

Sandwich #2–“Thirty Second” Blackberry Ginger Ice Cream Sandwich
E is particular about his ice cream. Plain vanilla won’t do, and he’s more partial to fruit than chocolate. I on the other hand am “coo-coo for Cocoa Puffs” crazy for chocolate. And pecans. And mint. All together! But this isn’t about me!

Sandwich #1–“The Beginning” Turkey and Swiss on Country White
The first sandwich I ever made for E is the one that he loves the most–turkey and swiss with lettuce. Crispy bread, flavorful turkey, and pickles on the side are a must. It takes so little to make him so happy.
