Are you watching “Cosmos”? If not, you should.
Because I am dating a science nerd, I have to keep up with celebrities not covered by Us Weekly. Stephen Hawking, Bill Nye the Science Guy, and—my new crush—Neil deGrasse Tyson.
E used to play reruns of the original “Cosmos” with Carl Sagan while he worked in his office on a project or wanted to put something, anything on television to keep me from watching “The Real Housewives of Atlanta.” But Fox has brought back “Cosmos” in full form, with host Neil. deGrasse. Tyson. So each Sunday, E and I finish dinner early so we can watch “Cosmos.” It’s must see TV y’all.
I have a huge crush on Neil. He is the smoothest brotha I’ve seen on television since that guy who played the president on “24.” And, didya know he studied Latin Ballroom dance in college? They should have him on “Dancing with the Stars.” He’d slay the competition. And, Neil collects wine. And cooks! Don’t worry, I’m not leaving E for Neil. Neil’s married with two kids, which makes him all the more special. Love seeing a devoted father still married to his college sweetheart.
Last weekend, I made cookies to go with our “Cosmos.” I saw these brown sugar and chocolate thin sandwich cookies went well with tea and Neil’s presentation on black holes (I replaced the poppy seeds with chia seeds because I had some on hand). E and I ate a handful while still warm, but we left a few so we could eat them with the rerun of “Cosmos” broadcast the next day on National Geographic.
2 1/2 cups whole wheat flour
1 teaspoon baking powder
1 pinch salt
2 tablespoons, and a teaspoon of chia seeds
1 1/2 sticks butter, softened
2/3 cup brown sugar
2 large egg yolks
1 tablespoon vanilla extract
2-3 tablespoons milk
2 tablespoons turbinado sugar
2 tablespoons thick sea salt
1 cup good chocolate chips
1 teaspoon vegetable oil
Combine flour, baking powder, salt and chia seeds. Set aside. In another large bowl, beat the butter until fluffy and creamy. Then, slowly add sugar, making sure to scrape the sides of the bowl. Then, add egg yolks, then vanilla extract. Next, slowly add the flour mixture, until just combined. If still dry (it probably will be), add the milk. On a large, flour covered counter, roll out dough into one large ball and knead a few times. Divide into four separate pieces, then flatten each into a pancake. Wrap each in plastic wrap, and refrigerate for at least an hour.
When ready to cook, preheat oven to 350 degrees. Roll out each dough pancake with a rolling pin onto a floured workable surface until wafer thin (about an 1/8 inch thickness). Cut cookie shape out with a cookie cutter, and place on greased baking sheet. Sprinkle with the turbinado sugar and sea salt. Bake for about 10 minutes. Let cool.
In a double boiler (or a heat safe bowl placed in another saucepan with a shallow amount of hot water), combine chocolate and oil and melt chocolate, stirring well. When smooth, spread chocolate on flat side of one cookie, and sandwich another, flat side down on chocolate, on top. Repeat with remaining cookies. Recipe makes about 30 cookies, or 15 sandwiches.
