- make another peach cobbler. E’s been drooling since I bought peaches earlier this week.
- run 5 miles
- make mint pesto with the mint growing on our balcony
- go shopping. Mama needs a new pair of shoes.
- make a kick ass crab cake sandwich
- work on portfolio
All can be done if I just prioritize my time.
This morning, E and I had a whole debate about time management and getting things done. “I just don’t have enough tiiiime,” I whined. E’s solution? “Cut some stuff out.”
“But I have to go shopping!” I complained.
“No, you don’t. Is shopping going to help you get that portfolio done?”
Since I had a time management problem, I elected to make something quick and simple for E. Egg white scrambles worked fine. E went to CrossFit this morning, and approved of the healthy meal when he returned.
I missed the gym, because, well, I have a time management problem.
I also didn’t do the dishes before work, because, well, I have a time management problem.
But I did have time to come home and write this blog post before I went to bed, and still left enough time to get a little nookie from you know who. Bam!
2 English muffins
5 egg whites
2 green onions, chopped
1 tablespoon grated parmesan
1 cup assorted cherry tomatoes
1 teaspoon rosemary
1 tablespoon olive oil
1 pat butter
salt and pepper to taste
Warm olive oil in skillet over low to medium heat. Slice your tomatoes into quarters and toss in skillet. Cook until soft, about 4-5 minutes. Toss in green onions and rosemary, cook for another 2 minutes. In a small bowl, beat eggs and grated parmesan together, sprinkle in salt and pepper, and pour into skillet over vegetables. With a wooden spatula, stir mixture so eggs are scrambled yet cooked through in skillet.
Toast bread. Butter insides, then scoop on egg white mixture onto bottom sides of muffins. Top with other side and serve. Makes two sandwiches.
