E is particular about his ice cream. Plain vanilla won’t do, and he’s more partial to fruit than chocolate. I on the other hand am “coo-coo for Cocoa Puffs” crazy for chocolate. And pecans. And mint. All together! But this isn’t about me!
Sunday night. No company, just the two of us. After E. cooked an amazing dinner of scallops and roasted tomatoes with basil, I felt the pressure to come back with a suitable dessert. Panicked, I went to the trusty ice cream sandwich.
Using ginger cookies and some blackberry currant ice cream we had in the refrigerator, I created the thirty second dessert sandwich.
one serving ice cream flavor of your choosing
four Anna’s Ginger Thins Swedish cookies
Place one cookie on a plate. Spoon out ice cream on one of the ginger flavored flower shaped cookie. Top with another and carefully press down. Bite (carefully, don’t want to freeze your front teeth! I hate that feeling) Enjoy.
E swallowed this down in two bites. It took me three. I have a smaller mouth.
