Sandwich #97– “Oooey Gooey” Fig and Mozzarella Panini

DSC_0437Clearly I’m obsessed with our panini press.

Fig and mozzarella is more of a midday snack then breakfast, but I couldn’t help myself. Mozzarella is the only soft cheese that I’ll tolerate. E loves brie and goat cheese, but for me, the harder the cheese, the better. This wasn’t the healthiest breakfast and it certainly wasn’t good for beach body abs. Whateves. I’ll hit the gym later.

E lumbered out of the bedroom right as the sandwiches were ready, wearing that white cotton robe. I’m starting to feel like I’m dating The Dude from The Big Lebowski.

After working until 2 am developing two super cool iPhone apps simultaneously, E lumbers out of bed around 10 am and the first thing he can grab is that white robe. It’s now become his work uniform, akin to how a doctor puts on scrubs, or a garbage collector wearing coveralls, before they clock in. I shake my head wondering if he ever puts on real clothes for the day.

“I don’t just hang out here in my robe all day like some slob,” he tells me. “I put on pants before 5 PM.”

“OOOEY GOOEY” FIG AND MOZZARELLA PANINI
few slices mozarella
1 tablespoon fig spread (or 3 -4 slices real figs if you have time. I didn’t)
2 tablespoons olive oil

Slice baguette. Drizzle on olive oil on all slices top and bottom. Spread on fig jam or slice real figs and layer on. Then layer on mozzarella. Top with other piece of bread. Place in panini press for 5 minor until golden brown. Remove (slice if need) and serve.
