Back in the 90s, when everyone was eating low fat and fat free everything, we all ate rice cakes thinking these were healthy> I guess the were healthier than say, Cheez-Its. Earlier this week, for the first time in about a decade, I bought rice cakes for sandwiches. Sushi sandwiches.

I saw this article for man’s sandwiches who had the idea for sushi sandwiches. As a goof, and since I only had two sandwiches left, I thought I’d have some fun and make these for E. You know he said they were actually good? And he ate the rice cakes? He can’t eat raw avocado, but he can eat raw air?

Weirdo.

“TURNING JAPANESE” SUSHI SANDWICH
2 rice cakes
2 tablespoons seaweed salad
sushi grade tuna slices
sesame seeds
wasabi

On a rice cake, scoop on seaweed salad, then tuna, then top with a bit of wasabi. Sprinkle sesame seeds. Top with another rice cake. Serve.
