After surgery to evict Lupita, I was supposed to take it easy. I can’t go to the gym, and I can’t lift anything over ten pounds until my chest heals. But I can’t sit on the couch forever. Plus, E and I had to eat.
Things that I could make in a food processor that don’t require much lifting of pots and pans served me well this weekend, another reason why hummus-based sandwiches were great meals. In part two of the “Dump the Lump” series, I bring you pumpkin hummus. I’d never even heard of pumpkin hummus before but when I spotted a recipe for it, my mouth watered. I love pumpkin, and I figured the flavor would go well with Greek yogurt and honey.
1 large garlic clove, smashed
juice of 1/2 lemon
1 can garbanzo beans, drained
3/4 cup pumpkin puree
3/4 teaspoon dried sage
1/3 teaspoon cinnamon
1/2 teaspoon salt
3 1/2 tablespoons olive oil
Fresh ground pepper to taste
pinch of paprika
1 pita
1 cup plain Greek yogurt
2-3 tablespoons honey
Add all to food processor and blend. Toast pita and cut into fourths. Smear pumpkin hummus and Greek yogurt inside, then drizzle honey inside. Makes 4 small sandwiches.
