
Nothing is better than mom’s leftover’s, and certainly nothing is better between two pieces of bread than mom’s cooking. I sliced up some of that leftover ham from last night’s dinner, and sliced up hard cheddar cheese on top. I thought I could make this for E to snack on when he got here, before we tucked into our Christmas Eve dinner.
Instead, E called me a half hour after I expected him to leave. “Hey, I’m going to be late. I forgot the presents.”
Oh dear. Oh well. Dinner may be a titch late, but sorry hon, I can’t keep a grilled cheese this good waiting for you. Promise I’ll make you another one when you get here.
2 slices wheat bread
3-4 slices ham
3-4 slices sharp cheddar cheese (enough to cover one slice of bread thoroughly)
1 dollop mustard
3-4 pats of butter
1 tsp dried parsley
salt and pepper to taste
Slather one side of bread slices with butter. Flip over, and coat other side with mustard. Layer on slices of cheese, then ham, then more cheese. Melt in pan on low heat for 3-5 minutes on each side or until cheese melts, flipping sandwich once with spatula. Remove from pan, cut into quarters and serve. Makes four small sandwiches.
