Hummus, tabbouleh, radishes, cucumber and avocado are packed between three slices of wheat bread for this veggie club sandwich. There are no rules as to how you layer your ingredients, but here’s what I did for the photo above. I do recommend making a sandwich you can actually fit in your mouth. Smaller slices of bread can help that cause.
3 slices bread
3 tablespoons hummus
1 radish, sliced thinly
1/4 cucumber, sliced thinly
2 tablespoons tabbouleh
3 slices red onion
In a small bowl, smash avocado with lemon juice, black pepper and sea salt.
Lay out slices of bread. On bottom slice, smooth on some hummus, avocado, tabbouleh, then layer on red onion. On another slice smooth on more hummus, cucumber, radish and lettuce. Place on top of bottom layer. Place lettuce on top of middle layer of bread. On the top slice layer on the rest of the hummus and place on top of sandwich, hummus side down. Slice in half and serve. Makes 1 sandwich.
