This beefy chicken club sandwich is packed with a new favorite condiment–yellow pepper coulis, a mustard-like pepper-based sauce that adds zing to the sandwich.
Yellow Pepper Coulis (Adapted from MolecularRecipes.com)
2 peppers
1 tablespoon sour cream
1/2 teaspoon olive oil
1/3 tablespoon fresh parsley
pinch of lemon zest
salt
pepper
3 slices whole wheat bread
4 or 5 slices chicken
3 4 slices of bacon
slice of Swiss cheese
slice of provolone cheese
4 or 5 leaves romaine hearts
Make coulis: In a medium skillet, add a teaspoon of olive oil and sauté peppers until soft. Remove from heat and chop up peppers. Add to a blender with sour cream, parsley and lemon zest. Blend until smooth and add salt and pepper to taste. Run liquid through a sieve and set aside.
Lay out three pieces of bread. Spread red pepper coulis on all three slices. On bottom slice, layer romaine, then chicken. Stack middle slice on top, then layer bacon. Then layer more romaine, then cheese, and stack top piece of bread on top. Slice in half and serve.
