The Italian Sausage, bathed in sweet peppers and onions, makes a meaty lunch or game time snack.
ITALIAN SAUSAGE WITH SWEET PEPPERS AND ONIONS
2 Italian sausages
1/4 cup water
1 teaspoon oil
1 tablespoon olive oil
1/2 red pepper, cut into strips
1/2 yellow pepper, cut into strips
1/2 orange pepper, cut into strips
1/2 white onion, chopped
2 hot dog buns
handful chopped Italian parsley
by 2 Italian sausages
1/4 cup water
1 teaspoon oil
1 tablespoon olive oil
1/2 red pepper, cut into strips
1/2 yellow pepper, cut into strips
1/2 orange pepper, cut into strips
1/2 white onion, chopped
2 hot dog buns
handful chopped Italian parsley
In a large skillet, add 1/4 cup of water and a teaspoon canola or vegetable oil. Add Italian Sausage and bring to a boil over medium heat. Lower heat and simmer for about 10 minutes, turning sausage to cook evenly on all sides.
Meanwhile, sauté peppers in a medium skillet with a tablespoon of olive oil, and cook for 5 minutes or until peppers soften slightly and lightly brown. Remove frothed.
Toast buns. Stack sausage in bun, then layer on peppers. Sprinkle on chopped onion, then sprinkle on chopped Italian parsley. Serve. Makes two sandwiches.
