It’s the weekend, the sun is shining, and it’s only appropriate that I share my watermelon cocktail recipe.
When my dinner guests walked in last week for my bun dinner party, this was the first thing I handed them. We bought a watermelon during out Chinatown shopping trip, but I wish I would have bought three more so I could have had enough to drink these refreshing beverages night. Alas, E and I only had so many hands, plus we had to carry all the food for the buns back from Chinatown.
This drink is an easy, crowd-pleasing cocktail that’s good for hot summer days. If you’re crashing at someone’s summer house for the weekend (like E and I have been doing for three weekends in a row), bring some in a pretty cooler or pitcher as a gift. Your host will be thrilled.
1 medium sized watermelon, seeded and cut into chunks
5-6 sprigs of mint
1/3 cup vodka (I used straight vodka, but a flavored one, like coconut, could serve well here, too)
Throw watermelon chunks and vodka into a blender. Blend well for about 45 seconds, until liquefied. Strain if needed (I didn’t need to). Muddle one or two mint sprigs at the bottom of a glass, then place a few ice cubes in the glass. Pour watermelon beverage over ice, and place another mint sprig on top for garnish. One small watermelon makes enough for about 8 drinks.
